suit consumer demands for nutrition information and

offer cuisine that compliments their health and
beauty services. Signature cuisine is a vital
part of the spa’s brand. Whether the menu is
traditional French or modern California cuisine,
executive chefs want to offer dishes that are as
delicious and they are nutritious. Restaurant
Dietitian worked with the Executive Chef to
develop new items and modify current best
sellers to meet the low-fat and low-calorie
guidelines for the in-house spa programs.

Darcie Ellyne has designed and taught college-level
nutrition and recipe modification courses to culinary
students. Health majors have benefitted from her courses
emphasizing personal nutrition and disease management.
She also taught principles of food service management to
Hospitality Management students. Gourmet cooks
appreciate her hands-on cooking classes where students
study unique foods and cultural recipes from around the
world.

The Child Nutrition and WIC
Reauthorization Act of 2004 requires all federally
funded school district meal programs to develop and
implement wellness policies that address nutrition and
physical activity. Restaurant Dietitian has consulted
with districts to develop and implement their Wellness
programs, advised food service committees and created
our “Notes from the Lunch Posse” nutrition newsletter o
support the programs district-wide.

Over the past 20 years, Darcie
Ellyne provided counseling; education and foodservice to
inspire and empower people take control of their health.
Working with healthcare providers, she has counseled
thousands of patients on all areas of nutrition ranging
from diabetes management and allergies to functional
foods. Running a hospital food service like a restaurant
changed the way clients healed.

Restaurant Dietitian helped
executive chefs bring their fine dining restaurants to
luxury senior condos. We reviewed menus, suggested
modifications and assured residents and chefs that the
selections satisfied nutrition needs while maintaining
the quality of a 3-star restaurant. We also conducted
onsite community nutrition classes to the residents so
they would appreciate and take advantage of the
nutritional delicacies the new menus provided.
